En una ladera verde sobre la costa, hileras de arbustos de té crecían en líneas ordenadas hacia el mar. Parecían casi tan perfectas como un dibujo. Polly se posó en un muro de piedra y miró. La finca comenzó en mil ochocientos ochenta y tres. Antes, la isla cultivaba naranjas, pero una enfermedad mató los naranjos. Los cultivadores necesitaban algo nuevo para el suelo volcánico, así que trajeron plantas de té y viejas máquinas inglesas. Ambas siguen en uso hoy, lo que hace de esta la finca de té más antigua de Europa.
Dentro de la pequeña fábrica, máquinas de hierro de más de cien años todavía enrollan y secan las hojas. Los trabajadores siguen recogiendo a mano las hojas nuevas, porque las hojas jóvenes dan el mejor té. Aquí no se usan pesticidas, una regla que los cultivadores han seguido desde el principio.
