Duminica cu Paella

În fiecare duminică, de când își putea aminti, bunicul lui Inés făcea paella. Nu de tipul pe care îl mâncau turiștii în restaurante ieftine de pe plajă, ci acel tip lent, cu oase și șofran și iepure într-o zi bună. O făcea pe terasă, la un foc de lemne pe care îl aprindea singur, chiar și acum, la optzeci și trei de ani.

Every Sunday for as long as she could remember, Inés's grandfather had made paella. Not the kind tourists ate in cheap restaurants by the beach, but the slow kind, with bones and saffron and rabbit on a good day. He made it on the patio over a wood fire he started himself, even now that he was eighty-three.

Duminica aceasta, Inés venise acasă din Madrid să-l vadă. Era mai slab decât ultima dată. Se mișca mai atent. Dar când a intrat pe terasă, el era deja ghemuit lângă foc, ajustând lemnele cu un băț lung de fier.

This Sunday Inés had come home from Madrid to see him. He was thinner than the last time. He moved more carefully. But when she walked into the patio, he was already crouched by the fire, adjusting the logs with a long iron stick.

"Ești târziu," a spus el, fără să se întoarcă. Întotdeauna spunea asta chiar și când ea ajungea devreme.

"You're late," he said, without turning around. He always said this even when she was early.

Ea s-a așezat lângă el și s-a uitat la tigaie. Orezul abia începea să absoarbă supa. Bucătăria din spatele lor mirosea a usturoi și rozmarin. Bunica ei era undeva înăuntru, trântind farfurii pe masă.

She knelt next to him and looked at the pan. The rice was just starting to absorb the broth. The kitchen behind them smelled like garlic and rosemary. Her grandmother was somewhere inside, banging plates onto the table.

El a arătat cu bățul spre tigaie. "Tu supraveghezi asta. Nu o amesteca. Oamenii care amestecă paella nu înțeleg paella."

He pointed at the pan with his stick. "You watch this one. Don't stir it. People who stir paella don't understand paella."

Inés nu s-a mișcat timp de treizeci de minute. A privit cum orezul își schimbă culoarea, cum fundul tigăii se prinde și se rumenește, cum bunicul ei o privește. Când în sfârșit a luat tigaia de pe foc, el a dat din cap o dată. Ea nu avea nevoie să-i spună altceva.

Inés didn't move for thirty minutes. She watched the rice change color, watched the bottom of the pan catch and brown, watched her grandfather watch her. When he finally took the pan off the fire, he nodded once. She did not need him to say anything else.
