ちょうど正午を過ぎたころ、通りはすっかり静かになる。シャッターは半分閉まっている。目当てにしていた事務所は閉まっていて、その隣の小さなレストランはにわかに満席になる。
ドミニカ共和国では、夕食よりもランチこそが一日のメインの食事だ。出てくる料理は白いご飯に、煮込んだ赤い豆をかけたもの、それに肉、たいていは鶏肉がのっていて、少しのサラダと、運がよければ揚げた青いプラタノが添えられる。これは「ラ・バンデラ」と呼ばれる。「国旗」という意味で、皿の上の色が国の色を表しているからだ。人々はほとんど毎日これを食べるが、それでも飽きることがない。
知っておくと役立つのは、レシピではなく、その時間のリズムだ。午後三時になってお腹をすかせて出かけても、良い店はもう空っぽで、食べ物も売り切れている。みんなが食べる時間に食べること。それから、立ったまま小さくて濃いコーヒーを頼み、再び暑さの中へ出ていくのだ。
