Es ist kurz nach Mittag, und die Straße ist still geworden. Rollläden sind halb heruntergelassen. Das Büro, das du wolltest, ist geschlossen, und das kleine Restaurant nebenan ist plötzlich voll.
In der Dominikanischen Republik ist das Mittagessen die eigentliche Mahlzeit des Tages, nicht das Abendessen. Der Teller, der kommt, hat weißen Reis, geschmorte rote Bohnen darübergegossen und ein Stück Fleisch, meist Hühnchen, dazu ein wenig Salat und, mit etwas Glück, gebratene grüne Kochbanane. Man nennt es la bandera, was die Flagge bedeutet, weil die Farben auf dem Teller die Farben des Landes sind. Die Menschen essen es die meisten Tage der Woche und werden nicht müde davon.
Wichtig ist nicht das Rezept, sondern der Rhythmus. Kommst du hungrig um drei Uhr nachmittags an, findest du die guten Läden leer und das Essen weg vor. Iss, wenn alle anderen essen. Bitte danach im Stehen um einen kleinen starken Kaffee und geh zurück hinaus in die Hitze.
