На тарілку кладуть білий рис, поливають його тушкованою червоною квасолею і додають шматок м'яса, зазвичай курки, з невеликим салатом збоку і смаженим зеленим бананом плантаном, якщо пощастить. Це називають ла бандера, що означає прапор, бо кольори на тарілці збігаються з кольорами країни. Люди їдять це майже щодня і не втомлюються від нього.
Корисно знати не рецепт, а ритм. Якщо ти прийдеш голодним о третій годині дня, побачиш, що хороші місця порожні, а їжа вже закінчилася. Їж тоді, коли їдять усі інші. А потім попроси маленьку міцну каву, випий її стоячи і повертайся назад у спеку.
