유럽에 남은 마지막 두 정원

북쪽 해안 위 초록 언덕에는 잘 다듬어진 차나무 이랑이 바다를 향해 길고 단정한 줄무늬로 내려가고 있었다. 자로 그은 것처럼 정갈했다. 폴리는 농원 가장자리의 낮은 돌담에 내려앉아, 유럽 대륙 전체에서 차를 여전히 상업적으로 재배하는 단 두 곳 가운데 하나이자 방문객에게 열려 있는 유일한 곳을 내려다보았다.

On a green hillside above the northern coast, rows of clipped tea bushes ran downhill in long, tidy stripes toward the sea, almost as neat as if they had been drawn with a ruler. Polly landed on a low stone wall at the edge of the plantation and looked out over one of only two places left on the entire European continent where tea is still grown commercially, and the only one open to visitors.

The plantation began in eighteen eighty-three, after a disease wiped out the oranges that used to be the island's main export. Looking for something else the volcanic soil could support, a local grower imported tea bushes along with English machinery built to process them, and both have stayed in near-continuous use ever since, making this the oldest working tea estate in Europe by a wide margin.

낮은 공장 건물 안에서는 백 년이 넘은 무쇠 기계들이 배를 타고 처음 도착했을 때와 거의 똑같이 잎을 비비고, 고르고, 말린다. 일꾼들은 지금도 계단식 밭을 따라 가장 새로 난 잎을 손으로 딴다. 여린 윗잎이 가장 좋은 차가 되기 때문이다. 그리고 이곳에서는 살충제도 제초제도 뿌리지 않는다. 재배자들이 처음부터 지켜온 규칙이다.

Inside the low factory building, iron machines more than a century old still roll, sort, and dry the leaves almost exactly as they did when they first arrived by ship. Workers still pick the newest growth by hand along the terraces, since the tender top leaves make the best tea, and nothing here is sprayed with pesticide or herbicide, a rule the growers have kept since the very beginning.

폴리는 따뜻한 계단밭 한 줄을 따라 걸으며 윤이 나는 초록 잎을 스쳤다. 잎에서는 풀과 비의 냄새가 희미하게 났다. 언덕 아래 어딘가에서, 다섯 세대의 재배자들이 한 번의 정성스러운 수확씩 쌓아가며 이 언덕을 있어야 할 모습 그대로 지켜왔다.

Polly walked along one warm terrace, brushing against rows of glossy green leaves that smelled faintly of grass and rain. Somewhere down the slope, five generations of growers had kept this hillside exactly as it was meant to be, one careful harvest at a time.
