Molto prima del giorno, i vicoli coperti vicino al castello erano già rumorosi. Omicho è un mercato di corsie strette sotto un unico tetto. Mentre la città dorme, i pescivendoli mettono la pesca della notte sul ghiaccio tritato. Ricciole, calamari e pesci d'argento piatti stanno in file ordinate. Il pavimento è bagnato e tutto sa di sale freddo.
Il mercato fa questo dal millesettecentoventuno. La famiglia al potere riunì i venditori di cibo vicino alle porte del castello. Tre secoli dopo è cambiato poco. Qui la gente lo chiama semplicemente la cucina. Continua a nutrire i ristoranti, le case da tè e le case di tutta la città.
Le mattine più rumorose arrivano d'inverno. La stagione del granchio delle nevi si apre a novembre. Il piano dell'asta si riempie di vassoi di legno con i granchi distesi sul dorso. Ogni granchio ha un cartellino su una chela con il nome del porto. I maschi grandi si vendono a prezzi altissimi. Le femmine, più piccole, hanno una stagione più breve, e la gente apprezza le uova sotto il carapace.
A metà mattina è tutto finito. I vassoi sono impilati e il pavimento viene lavato. Polly si posò su una cassetta vuota e guardò scendere le saracinesche.
