What Sunday Still Demands

For as long as Inés could recall, Sunday in her grandfather's house had meant one immutable thing: paella, never the tourist rendition served under beachside parasols. His was the unhurried kind, built on bones and saffron, with rabbit on a fortunate week. He cooked it on the patio, over a wood fire he still lit and tended himself, a ritual that had survived, untouched, into his eighty-third year.

Desde que conseguia se lembrar, o domingo na casa do avô de Inés significava uma coisa imutável: paella, nunca a versão turística servida debaixo de guarda-sóis de praia. A dele era a versão sem pressa, construída sobre ossos e açafrão, com coelho nas semanas de sorte. Ele a preparava no quintal, sobre uma fogueira que ainda acendia e cuidava com as próprias mãos, um ritual que sobrevivera, intacto, até seus oitenta e três anos.

This particular Sunday, Inés had travelled down from Madrid to see him. He looked thinner than she remembered, and each movement now carried a new deliberateness. Yet when she stepped onto the patio, there he already was, crouched beside the fire, coaxing the logs into place with a long iron poker.

Naquele domingo em particular, Inés tinha viajado desde Madri para vê-lo. Ele parecia mais magro do que ela se lembrava, e cada movimento agora carregava uma deliberação nova. Ainda assim, quando ela pisou no quintal, lá estava ele, agachado ao lado do fogo, ajeitando as toras no lugar com um longo atiçador de ferro.

"You are late," he announced, without glancing up. He said this every week, regardless of the hour.

"Você chegou atrasada," ele anunciou, sem levantar os olhos. Ele dizia isso toda semana, não importava a hora.

She knelt beside him and studied the pan. The rice had only just begun to drink in the broth. From the kitchen behind them drifted the mingled scent of garlic and rosemary, while her grandmother set plates onto the table with more force than the occasion required.

Ela se ajoelhou ao lado dele e observou a panela. O arroz tinha acabado de começar a beber o caldo. Da cozinha atrás deles vinha o aroma misturado de alho e alecrim, enquanto a avó colocava os pratos na mesa com mais força do que a ocasião exigia.

He gestured at the pan with his stick, without looking away from it. "Watch this one closely. Do not stir it. Whoever stirs paella has never understood paella."

Ele apontou para a panela com a bengala, sem tirar os olhos dela. "Preste bastante atenção nessa. Não mexa. Quem mexe na paella nunca entendeu a paella."

Inés did not move for half an hour. She watched the rice shift through its shades of gold, watched the base of the pan darken into a crust, watched her grandfather watch her in turn. When he finally lifted the pan from the fire, he offered a single nod. Nothing further needed saying.

Inés não se moveu por meia hora. Ela viu o arroz passar por seus tons de dourado, viu o fundo da panela escurecer até formar uma crosta, viu o avô observá-la de volta. Quando ele finalmente tirou a panela do fogo, deu um único aceno de cabeça. Não era preciso dizer mais nada.
