For as long as Inés could recall, Sunday in her grandfather's house had meant one immutable thing: paella, never the tourist rendition served under beachside parasols. His was the unhurried kind, built on bones and saffron, with rabbit on a fortunate week. He cooked it on the patio, over a wood fire he still lit and tended himself, a ritual that had survived, untouched, into his eighty-third year.
This particular Sunday, Inés had travelled down from Madrid to see him. He looked thinner than she remembered, and each movement now carried a new deliberateness. Yet when she stepped onto the patio, there he already was, crouched beside the fire, coaxing the logs into place with a long iron poker.
"You are late," he announced, without glancing up. He said this every week, regardless of the hour.
She knelt beside him and studied the pan. The rice had only just begun to drink in the broth. From the kitchen behind them drifted the mingled scent of garlic and rosemary, while her grandmother set plates onto the table with more force than the occasion required.
He gestured at the pan with his stick, without looking away from it. "Watch this one closely. Do not stir it. Whoever stirs paella has never understood paella."
Inés did not move for half an hour. She watched the rice shift through its shades of gold, watched the base of the pan darken into a crust, watched her grandfather watch her in turn. When he finally lifted the pan from the fire, he offered a single nod. Nothing further needed saying.
