What Sunday Still Demands

For as long as Inés could recall, Sunday in her grandfather's house had meant one immutable thing: paella, never the tourist rendition served under beachside parasols. His was the unhurried kind, built on bones and saffron, with rabbit on a fortunate week. He cooked it on the patio, over a wood fire he still lit and tended himself, a ritual that had survived, untouched, into his eighty-third year.

منذ أن استطاعت إينيس أن تتذكر، كان الأحد في بيت جدها يعني شيئا واحدا لا يتغير: الباييا، لا تلك النسخة السياحية التي تُقدم تحت مظلات الشاطئ. كانت باييا جده من النوع غير المستعجل، مبنية على العظم والزعفران، ومعها أرنب في الأسبوع السعيد. كان يطبخها في الباحة، فوق نار من الحطب لا يزال يوقدها ويعتني بها بنفسه، طقس صمد من دون أن يمسه تغيير حتى عامه الثالث والثمانين.

This particular Sunday, Inés had travelled down from Madrid to see him. He looked thinner than she remembered, and each movement now carried a new deliberateness. Yet when she stepped onto the patio, there he already was, crouched beside the fire, coaxing the logs into place with a long iron poker.

في هذا الأحد بالذات، سافرت إينيس من مدريد لزيارته. بدا أنحف مما تذكرت، وباتت كل حركة تحمل الآن تأنيا جديدا. ومع ذلك، حين خطت إلى الباحة، وجدته هناك بالفعل، منحنيا بجانب النار، يرتب الحطب في مكانه بعصا حديدية طويلة.

"You are late," he announced, without glancing up. He said this every week, regardless of the hour.

قال، من دون أن يرفع نظره: "لقد تأخرتِ." كان يقول هذا كل أسبوع، بصرف النظر عن الساعة.

She knelt beside him and studied the pan. The rice had only just begun to drink in the broth. From the kitchen behind them drifted the mingled scent of garlic and rosemary, while her grandmother set plates onto the table with more force than the occasion required.

جثت بجانبه وتفحصت المقلاة. كان الأرز قد بدأ للتو يمتص المرق. وانتشرت من المطبخ خلفهما رائحة الثوم وإكليل الجبل ممتزجة، بينما كانت جدتها تضع الصحون على الطاولة بقوة أكبر مما يستدعيه الموقف.

He gestured at the pan with his stick, without looking away from it. "Watch this one closely. Do not stir it. Whoever stirs paella has never understood paella."

أشار إلى المقلاة بعصاه، من دون أن يحول نظره عنها. "راقبي هذه جيدا. لا تحركيها. من يحرك الباييا لم يفهم الباييا يوما."

Inés did not move for half an hour. She watched the rice shift through its shades of gold, watched the base of the pan darken into a crust, watched her grandfather watch her in turn. When he finally lifted the pan from the fire, he offered a single nod. Nothing further needed saying.

لم تتحرك إينيس لمدة نصف ساعة. راقبت الأرز يتنقل بين درجات الذهبي، وراقبت قاع المقلاة يغمق ليتحول إلى قشرة مقرمشة، وراقبت جدها بدوره يراقبها. وحين رفع المقلاة أخيرا عن النار، اكتفى بإيماءة واحدة من رأسه. لم تعد هناك حاجة لقول شيء آخر.
