The Galley

The kitchen was the warmest room on the ship. Polly came in. She perched on the counter.

The cook was named Esteban. He was small and square. He had octopuses tattooed on his arms. He cooked on this ship every day.

El cocinero se llamaba Esteban. Era pequeño y robusto. Tenía tatuajes de pulpos en los brazos. Cocinaba en este barco todos los días.

"There is no market out here," he said. "We buy food in Guam. Fresh food first. Then frozen. Then cans."

"Aquí no hay mercado," dijo. "Compramos comida en Guam. Primero alimentos frescos. Luego congelados. Después enlatados."

He showed her the freezer. It was small. Inside: pork, frozen broccoli, butter, a whole tuna.

Le mostró el congelador. Era pequeño. Dentro: cerdo, brócoli congelado, mantequilla, un atún entero.

Past the freezer were the dry boxes: rice, pasta, sacks of flour for bread.

Más allá del congelador estaban las cajas de secos: arroz, pasta, sacos de harina para el pan.

The crew had twenty-seven people. They worked hard. Esteban's job was to feed them. But it was also to help them feel calm.

La tripulación tenía veintisiete personas. Trabajaban duro. El trabajo de Esteban era alimentarlos. Pero también era ayudarles a sentirse tranquilos.

"Three meals a day. Same time every day. In any weather," he said. "When everything is uncertain, food should be certain."

"Tres comidas al día. A la misma hora cada día. Sin importar el clima," dijo. "Cuando todo es incierto, la comida debe ser segura."

Polly watched him cook. He was making rice in coconut milk. He toasted the rice first. Then he added coconut milk and water. He set a timer.

Polly lo observó cocinar. Estaba haciendo arroz con leche de coco. Primero tostó el arroz. Luego añadió leche de coco y agua. Puso un temporizador.

Then he watched the timer for a moment.

Luego miró el temporizador por un momento.

"What does the pilot eat at the bottom?" Polly asked.

"¿Qué come el piloto en el fondo?" preguntó Polly.

Esteban smiled. "A sandwich. Cheese and ham. An apple. Water. Six hours each way."

Esteban sonrió. "Un sándwich. Queso y jamón. Una manzana. Agua. Seis horas de ida y vuelta."

The timer ticked. A pan began to warm. Fresh bread sat on the windowsill. Esteban cut a slice of mango for Polly. She ate it. He went back to the rice.

El temporizador avanzaba. Una sartén comenzó a calentarse. Pan fresco reposaba en el alféizar de la ventana. Esteban cortó una rodaja de mango para Polly. Ella la comió. Él volvió al arroz.
